Basic Tomato Sauce

Ingredients

  • 2 Tbsp olive oil
  • 3/4 cup tomato paste
  • 2 1/2 cups peeled and chopped fresh or canned tomatoes
  • 1 grated carrot or 1 tsp sugar
  • 1/2 tsp freshly ground pepper
  • 3 large basil leaves, finely chopped
  • 5 Tbsp butter
  • Salt and pepper to taste

Preparation

Step 1

1. Heat oil in a heavy-bottomed saucepan. Stir in the tomato paste, tomatoes, carrot and pepper. Simmer for 30 minutes. Add basil and butter and cook 15 minutes more.

2. Serve with cooked pasta.
