Ingredients
- 1 lb spicy ground sausage
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 5 cups beef broth
- 1/2 cup water
- 1/2 cup red wine
- 1 can tomatoes, chopped
- 1 cup sliced carrots
- 1/2 tsp basil
- 1/2 tsp oregano
- 8 oz tomato sauce
- 1 1/2 cups sliced zucchini
- 16 oz cheese filled tortellini
- 1 medium green pepper, chopped
- 3 tbs chopped fresh parsley
- Fresh grated Parmesan cheese
Preparation
Step 1
Brown sausage in large Dutch oven. Set aside. Saute onion and garlic in same pot until tender. Add broth, tomatoes, wine, water, carrots, basil, oregano, tomato sauce and sausage. Bring to a boil. Reduce heat and simmer uncovered 30 minutes. Skim fat. Stir in zucchini, tortellini, parsley and green pepper. Simmer uncovered 20 minutes or until tortellini floats to top. Serve with Parmesan cheese.
