Ingredients
- cooking spray
- 1 1/2 pounds ground beef
- 1 medium onion, chopped
- 1 medium carrot, sliced
- 2 small red or white potatoes
- 1 bag shredded cabbage
- 2 teaspoons paprika
- 1 can low-sodium chicken broth
- 1 28-ounce can crushed tomatoes
- 3 tablespoons cider vinegar
- 3 tablespoons light brown sugar
- 3 tablespoons Worcestershire sauce
- 1/2 cup long grain rice
- 3 tablespoons chopped fresh dill
- salt to taste
Preparation
Step 1
Spray a large Dutch with cooking spray. Over medium-high heat, add the beef and cook until no longer pink, about 5 minutes. Add the onion, carrot and cabbage. Sprinkle with the paprika. Cook until the cabbage is wilted, about 5 minutes.
Add the broth, tomatoes, vinegar, brown sugar and Worcestershire. Bring to a simmer and cook until the cabbage is tender, about 40 minutes.
Add the rice and season with salt. Cook until the rice is just tender (it will cook more off the heat), about 15 minutes. Stir in the chopped dill.
