Creamy Macaroni and Cheese

Ingredients

  • 1/4 cup crumbled, cooked bacon
  • 1 large onion, sliced thinly
  • 8 oz elbow macaroni
  • 8 oz mozzarella cheese, shredded
  • 2 to 4 oz blue cheese, crumbled
  • 1 cup half and half or light cream
  • 1/8 tsp pepper

Preparation

Step 1

Preheat oven to 350 degrees. Brown onion in small amount of oil in skillet. Mix in bacon. Cook macaroni according to package directions. Drain and pour into 1 1/2 quart cassarole dish. Add bacon, onion 1/2 of the mozzarella, the blue cheese, cream and pepper. Toss gently to combine. Bake uncovered for 20 minutes. Top with remaining cheese. Bake 10 minutes more or until brown and bubbly.
