Ingredients
- 1 stick (1/2 cup) plus 2 Tbsp. butter, softened, divided
- 3/4 cup sugar
- 1/2 cup molasses
- 2 eggs, well beaten
- 2 cups all-purpose flour
- 1/2 cup whole wheat pastry flour
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 1/2 cups unsweetened applesauce
- 1-2 cups chopped cranberries or 1/2 cup chopped nuts
- 1/4 cup rolled oats
- 1/4 cup brown sugar
Preparation
Step 1
1. Cream ½ cup butter. Add sugar and molasses and continue to beat until fluffy.
2. Add eggs and beat thoroughly.
3. In another bowl, sift flours, cinnamon, cloves, nutmeg, salt and baking soda together.
4. Add dry ingredients to creamed butter mixture alternately with applesauce, beating thoroughly after each addition.
5. Fold in cranberries or nuts.
6. Pour into greased tube pan.
7. In a food processor, combine oats, sugar and remaining 2 Tbsp. butter. Pulse to combine. Sprinkle on top of cake.
8. Bake at 350 degrees for 45-60 minutes or until pick inserted in middle comes out clean.
9. Cool in pan for 10 minutes and then invert on rack to cool.
