Sweet and Sour Fish Sauce (Nuoc mam)

This is pretty much the universal dipping sauce for eggrolls, spring rolls, etc. Fish sauce refers to two different things: the actual dark brown liquid made from fish and to the condiment made here. You can find fish sauce in the Asian aisle of most grocery stores.

Ingredients
- 3/4 cup water
- 2 tbsp fish sauce
- 3 tsp sugar or Splenda
- 1 tsp rice vinegar
- 1 clove garlic, minced
- Asian hot sauce, to taste (the kind with a rooster on the container)
Preparation
Step 1
Mix all ingredient in a bowl until the sugar is completely dissolved. Refrigerate in a tightly sealed container for 1 week.
