Ingredients
- 4 large potatoes cut into cubes
- 1 tsp salt
- 6 cloves garlic, peeled and crushed
- Zest of 1 lemon
- 4 sprigs fresh rosemary
- 1 boneless leg of lamb (about 4 lbs, trimmed and tied.
- 2 tbs EVOO
- 1/2 cup dry white wine
Preparation
Step 1
1. Place potatoes in the bottom of the slow cooker.
2. In a small bowl, mix the garlic,salt, lemon zest and rosemary together and rub the mixture all over the lamb.
3. Heat the EVOO in large pan and brown all sides of lamb.
4. Place lamb in slow cooker and pour in the wine.
5. Cook on low for 10-12 hrs or high for 5-6 hrs.
