Ingredients
- 1/3 cup olive oil
- 1 onion, chopped
- 1 (10 3/4 ounce) can tomatoes, chopped
- 1 bouillon cube, beef
- 1 garlic clove
- 1 teaspoon salt
- 1 jalapeño
- 1/4 teaspoon black pepper, freshly ground
- 5 potatoes, peeled and cubed
- 1 bunch basil
- 1/2 pound tubetti
Preparation
Step 1
Heat oil in large saucepan. Add onions and cook until golden. Add tomato juice, chopped tomatoes (about 5 max), beef bouillon, garlic clove, salt, jalapeño pepper, black pepper and basil. Add water and potatoes.
Cook until potatoes are tender, about 45 minutes.
Cook tubetti in boiling salted water. Drain.
Add tubetti to cooked potatoes and sauce.
