Ingredients
- 6 cans minced clams
- 3/4 c. minced onion
- 1 c. diced celery
- 2 c. cubed potatoes
- 1 c. diced carrots
- 3/4 c. butter
- 3 bottles clam juice
- 3/4 c. flour
- 1 quart 1/2 and 1/2
- 2 T. red wine vinegar
- 1 1/2 tsp. salt
- pepper to taste
- bacon drippings
- crumbled bacon
Preparation
Step 1
Saute veggies in bacon drippings until tender. In a skillet melt butter and whisk in flour until smooth. Whisk in cream and stir constantly until thick and smooth. Add to veggies and add clam juice. Heat through and add clams. Stir in vinegar and season with salt and pepper.
