Ingredients
- 6 large carrots
- 4 eggs
- 1 cup white sugar
- 1 cup brown sugar
- 1 cup oil
- 2 cups flour
- 2 tsp. baking powder
- 1 tsp. baking soda
- 3 teaspoons cinnamon
- pinch of salt
Preparation
Step 1
1. Preheat oven to 350. Boil carrots and blend in food processor.
2. Add rest of ingredients to a big bowl, add carrots.
3. Spoon into muffin cups.
4 . Bake for 15-20 minutes.
