vegan cashew cheese

Ingredients

  • 1 1/2 c raw cashews, soaked for 2-12 hours
  • 1 Tbsp raw apple cider vinegar
  • 1 Tbsp lemon juice
  • 3 Tbsp coconut oil, melted
  • 3/4 c water
  • 1 clove garlic
  • 1 Tbsp chives, chopped
  • 2 Tbsp cilantro, chopped
  • 1 tsp salt

Preparation

Step 1

Drain the soaked nuts. In food processor blend all ingredients except the last three until smooth. Stir in chives, cilantro and salt. Refrigerate until firm, about 4-6 hours or overnite. Makes 1 3/4 c cheese.
