White Bean Dip

Ingredients

  • 1 can white beans, rinsed and drained
  • 1 clove minced garlic
  • 1/2 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 2 minced anchovy fillets
  • 1 tablespoon herb, rosemary, tarragon, sage, basil, chives, dill)
  • 1/4 cup olive oil

Preparation

Step 1

Blend all ingredients, except olive oil, in a food processor until chunky, then slowly add olive oil and blend until smooth and somewhat fluffy. Garnish with herb and olive oil.
