Shredded Chicken for Enchiladas, Tacos, Etc

Chicken is SO MOIST and tender- AMAZING!! We serve on corn tortillas with all the fixings..

Ingredients

  • 1 lb boneless, skinless, chicken breast
  • 1 can Mexican-style tomatoes
  • 1 packet taco seasoning
  • 1 small white or yellow onion- chopped
  • 1 green pepper - chopped

Preparation

Step 1

1. Mix onion and green pepper and spread across bottom of slow cooker pot.
2. Lay chicken breast over pepper/onion mixture (I’ve used up to 6 breasts)
3. Mix tomatoes and taco seasoning together (I throw them in the blender to make a nice, smooth gravy).
4. Pour tomato mixture over chicken
5. Cook on low 6-8 hours
6. When cooking is done, pull breasts from pot and pull apart with a fork.
