Spanish Tapas Flatbread - Grilled

Ingredients

  • 1 Flatout artisan thin pizza crust (Rosemary or rustic white)
  • EVOO
  • 1/2 c manchego or asadero cheese, shredded
  • 2 ozs chorizo, cooked & drained
  • 2 T black olives
  • 1/4 c roasted red peppers
  • Handful of spinach leaves, stems cut off

Preparation

Step 1

Heat grill to med heat. Brush oil on one side of crust. Place flatbread on grill & brush other side with oil. Cook until flat starts to bubble up & grill marks form, about 1-2 min.

Carefully transfer flatbread from grill onto cookie sheet, grilled side up. Add cheese, chorizo, roasted red peppers, olives & spinach. Return to grill & let cook for one min. Move flatbread over to indirect heat, cover & let cheese melt.
