Very healthy lamb rogan josh recipe. Made during May 2010 curry feast.

Ingredients

  • 1 onion, peeled and chopped
  • 3 garlic cloves, peeled and minced
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1 tsp ground ginger
  • 1 tsp chilli powder
  • 450 g / 1 lb lamb steak, all visible fat removed and cut into pieces
  • 400 g tin chopped tomatoes
  • 1 bay leaf
  • 2 cinnamon sticks
  • 4 cardamom pods
  • 3 cloves
  • 198 ml / 7 fl oz chicken stock
  • 2 tsp artificial sweetener
  • Handful fresh coriander, chopped

Preparation

Step 1

1. Fry the onion and garlic in cooking spray until soft. Add powdered spices and fry for one minute, adding a little bit of water if it gets too dry.

2. Add lamb, tomatoes, bay leaf, cinnamon sticks, cardamom pods, cloves, stock and sweetener and simmer 30-35 minutes until reduced.

3. Remove the bay leaf and cinnamon sticks. Stir in chopped coriander. Serve.
