Salsa

Ingredients

  • 2 quarts peeled and diced tomatoes (preferably roma)
  • 1 cup chopped jalapeno peppers
  • 1 cup chopped celery
  • 1 cup chopped onions
  • 1/2 cup water
  • 1 cup white vinegar
  • 1 T brown sugar
  • 3 1/2 t salt
  • 1 1/2 t chili powder
  • 1/2 to 1 t crushed red pepper
  • 1/4 t garlic powder
  • 1 1/2 t lemon juice
  • 1/4 t black pepper

Preparation

Step 1

Combine all ingredients in a large pot. Bring to boiling; simmer 3-3 1/2 hours. Ladle inot sterilized jars, seal and process at 10 pounds of pressure for 30 minutes.

I usually add garlic, corn, black beans, tomato paste and cilantro.
