Beef Tenderloin Bites (Penzeys)

These beef tenderloin bites on toasted French bread will be the hit appetizers at any party! Seasoned with Turkish paprika and oregano means happy tummies.

Ingredients

  • Ten Tenderloin:
  • 1 pound 1 pound piece beef tenderloin (the thicker the better)
  • 1 tablespoon 1 tablespoon olive oil
  • 1 to 2 teaspoons 1 to 2 teaspoons Penzeys pepper
  • 1/2 teaspoon 1/2 teaspoon granulated garlic
  • 1 teaspoon 1 teaspoon Turkish oregano
  • 1 teaspoon 1 teaspoon Kosher flake salt
  • Crostini:
  • 1 1 loaf French bread
  • 2 tablespoons 2 tablespoons olive oil
  • 1/2 teaspoon 1/2 teaspoon garlic
  • 1/4 teaspoon 1/4 teaspoon Turkish oregano
  • 1/4 teaspoon 1/4 teaspoon Kosher flake salt

Preparation

Step 1

Preheat oven to 400˚F.

Tenderloin:
Rub tenderloin with oil, Penzeys pepper, garlic and oregano; let stand while oven is preheating. Sprinkle with Kosher flake salt just before you pop it in the oven. Depending on the thickness of the beef, it will need to cook 20 to 35 minutes. Keep a close eye on it or use a meat thermometer if you are unsure. Pull it at 130˚F for medium-rare; it will rise 5°F while resting.

Crostini:
While the beef is in the oven slice the French bread into nice thin rounds, brush with oil, sprinkle with garlic, oregano and salt and place on a baking sheet. When the beef is pulled from the oven, reduce heat to 300˚ and toast the bread briefly, 2 to 4 minutes, not to brown it, just to firm it up a bit. Remove from oven.

Thinly slice the tenderloin, place on top of the toasted bread and enjoy!
