Lemon Bar Cookies

  • Topping:
  • 1/2 cup butter
  • 1 cup flour
  • 1/4 cup powdered sugar
  • 2 eggs, well beaten
  • 1 cup sugar
  • 3 Tablespoons lemon juice
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 2 Tablespoons flour

Preparation

Step 1

All beating is done with a fork.

Crust: Cream butter and add flour and sugar. Blend and press into 8x8x2 inch pan. Bake at 300 for 20 minutes. While this is cooking prepare topping.

Topping: Combine eggs, sugar, salt and lemon juice; mix and add flour and baking powder. Stir until well mixed. Bake until set. Sprinkle with powdered sugar and cut into bars.
