Ingredients
- DRESSING:
- 1 LB. LARGE COOKED, PEELED SHRIMP
- 2 MEDIUM AVOCADOS, CHOPPED
- 1 CUP FRESH CORN KENNELS
- 1/4 CUP FRESH CILANTRO
- 2 TBSP. CHOPPED RED ONION
- LIME VINAIGRETTE
- 1/2 CUP FRESH LIME JUICE
- 1/4 CUP HONEY
- 1 GARLIC CLOVE, PRESSED
- 1/2 tsp SALT
- 1/4 tsp. PEPPER
- 1/3 CUP OLIVE OIL
Preparation
Step 1
SHRIMP
COMBINE FIRST 5 INGREDIENTS. GENTLY STIR IN LIME VINAIGRETTE TO COAT. COVER AND CHILL AT LEAST 1 HOUR.
DRESSING
WHISK TOGETHER FIRST 5 INGREDIENTS. GRADUALLY WHISK IN 1/3 CUP OLIVE OIL UNTIL BLENDED.
