Pulled Pork

Ingredients

  • 4 lb boneless pork butt (remove strings and excess fat)
  • 1 jar (250 ml) apricot preserves
  • 1 cup hot style bbq sauce
  • 1/2 cup chopped sweet onion
  • 1/2 cup chopped dried apricots

Preparation

Step 1

Place pork butt in slow cooker. Mix rest of ingredients in a bowl and pour on top of pork.

Cook on low heat for 8 to 10 hours or high heat for 4 to 5 hours.

Use 2 forks to gently shred the meat. Serve on kaiser rolls or over rice.
