ORANGE GRILLED CHICKEN PALILLARDS

Use thin chicken cutlets or pound chicken breast between two pieces of wax paper or in plastic wrap.


Ingredients

  • 1 cup orange marmalade
  • 2 tbs lemon juice
  • 1 tbs OJ
  • 4 bay leaves
  • 1/4 tsp ground cloves
  • coarse salt
  • ground pepper
  • 12 chicken paillards (or 6 chicken breast cutlets, halved and
  • pounded to 1/4 inch thickness
  • 2 oranges (1 cut in thin slices; 1 cut in wedges)

Preparation

Step 1

Combine marmalade, lemon juice, OJ, bay leaves, 1 tsp salt and pepper in bowl. Reserve 1/3 cup glaze for serving.

Preheat grill to med-hi. Season chicken w/salt/pepper. Place chicken on grill and brush with ½ of glaze. Grill 3 min. Flip chicken, brush w/remaining glaze and cook for 3 min. Transfer chicken to platter.

Grill oranges 1-2 min per side and add to platter. Serve chicken w/reserved glaze.
