Ingredients
- 1/2 cup sugar
- 4 large egg yolks
- 3 tbsp. all purpose flour
- 2 cups milk
- 4 tbsp. unsalted butter
- 1 tbsp. pure vanilla extract
- 36 vanilla wafer cookies
- 4 large firm ripe bananas, cut into 1/2 inch slices
- 1/2 cup heavy cream
- 1 tbsp. confectioners sugar
Preparation
Step 1
in a bowl, whisk the sugar and egg yolks until thick and pale. add the flour and 2 tbsp. of the milk. in the saucepan, heat the remaining milk and the butter until steaming. whisk the hot milk into the egg mixture. return the mixture to the saucepan and bring to a boil over moderate heat, stirring constantly. cook stirring, for 2m ins. transfer the custard to a bowl and stir in the vanilla.
arrange one-third of the cookies in the bottom of an 8 cup soufflé dish. top with one-third each of the bananas and custard. layer the remaining ingredients, ending with the custard, and then chill.
beat the cream with the confectioners sugar until firm. spoon the whipped cream over the pudding and serve.
