Penne with Sun-Dried Tomatoes and Lemon

Ingredients

  • 8 ounces penne
  • 1/4 cup olive oil
  • 3 rashers bacon, chopped
  • 1/3 cup lemon juice
  • 1 tablespoon fresh thyme
  • 1/3 cup chopped sun-dried tomatoes
  • 1/2 cup pine nuts, toasted

Preparation

Step 1

Cool the pasta in a large pan of rapidly boiling salted water until al dente. Drain.

While the pasta is cooking, heat the olive oil in a large pan, add the chopped bacon, fry, then add onion and stir over medium heat for 4 minutes or until the bacon is brown and the onion has softened.

Add the pasta to the pan with the lemon juice, thyme leaves, sun-dried tomato and pine nuts.

Stir over low heat for 2 minutes, or until heated through.
