Spicy Black Bean Burgers

Ingredients

  • 1/4 cup all purpose flour
  • 1/4 cup coarse cornmeal or polenta
  • olive oil or canola oil for sauteing
  • 1 yellow onion, diced
  • 1 red bell pepper, diced
  • 2 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 2 cups cooked or canned black beans rinsed and drained
  • 1/2 cup corn kernels
  • 1/2 cup bread crumbs
  • 2 tsp chili powder
  • 1/4 tsp cumin
  • 1/2 tsp salt
  • 2 tbsp minced fresh parsley

Preparation

Step 1

On a shallow plate, combine flour and cornmeal and set aside for coating.

In a saucepan over medium heat, heat oil and saute onion, peppers, garlic, and oregano, until onion becomes translucent. Set aside.

In a large sized bowl, mash black beans with potato masher or fork. Stir in onion/pepper mixture along with corn, bread crumbs, chili powder, cumin, salt and parsley. Mix well.

Shape into patties. Coat each with flour mixture.

Fry in a lightly oiled saute pan over medium heat for 5-10 minutes, or until browned on both sides. There’s a chance these burgers could fall through the slats on a grill, so if you want to grill them, use a special pan made for grilling more delicate foods.

Freeze any uneaten patties.
