Bacon-wrapped Pork Tenderloin

A quick way to cook pork tenderloin with a tangy sauce on the side.

Ingredients
- For sauce:
- 1 pork tenderloin (1 1/4 lbs.)
- 1/4 cup Dijon mustard, divided
- 3 bacon slices, cut in half
- 1/4 teas salt
- 1/4 teas pepper
- 2 T Dijon mustard
- 2 T water
- 1/3 c light mayonnaise
- 2 teas red-wine vinegar
- 1/2 teas bottled chopped garlic
Preparation
Step 1
Spread 1 T mustard over the pork tender. Arrange bacon diagonally over the pork, leaving a little space between slices. Place pork in roasting pan and bake at 450 for 30 minutes. Check pork after 20 minutes, if internal temperature is 170 remove from the oven. If not leave in the oven for 5 to 10 more minutes.
In a small bowl mix the sauce ingredients and serve on the side with the pork.
