Tangy Mustard Onions

Ingredients

  • 2 medium yellow onions
  • 2 Tbsp olive oil
  • 2 Tbsp whole yellow mustard seeds
  • 1/2-1 cup apple cider vinegar
  • 1/4 c firmly packed brown sugar
  • 1 bay leaf
  • 2 Tbsp spicy brown mustard
  • Kosher salt and black pepper to taste

Preparation

Step 1

Cut onions into fine dice, about 1/4 "-about 4 cups
Add oil and mustard seeds to large,cold skillet, then turn the heat to medium
When the seeds start to pop. add the onions and cook briefly until they start to become translucent
Stir in vinegar, brown sugar and bay leaf;
Cover and reduce heat to low.
When onions are tender, uncover, stir in the mustard and continue to simmer until liquid has evaporated as desired
Season to taste with salt and pepper
Refrigerate leftovers up to a week
