Ingredients
- 1/4 c. apple cider vinegar
- 2 T. Dijon mustard
- 2 T. honey
- 3/4 tsp. salt
- 1/4 tsp. freshly ground pepper
- 1/4 c. canola oil
- 2 (10-oz) packages shredded coleslaw mix
- 4 green onions, sliced
- 2 celery ribs, sliced
- 2 small honeycrisp, gala, or pink lady apples, thinly sliced
- Optional: dried cranberries, pistachios
Preparation
Step 1
Whisk together vinegar, mustard, honey, salt, and pepper. Gradually add oil in, whisking constantly until blended. I mix in a mason jar and shake vigorously.
Stir together coleslaw mix and remaining ingredients in a large bowl. Add dressing, tossing to coat.
