Layered Mexican Cornbread

Ingredients

  • 1 c. grated cheddar cheese
  • 1/2 c. chopped onion
  • 1/3 c. vegetable oil
  • 2 eggs
  • 2/3 c. milk
  • 2 tbsp baking powder
  • 1/2 c. all purpose flour
  • 1 c. all purpose cornmeal
  • 1 c. chopped jalapenos
  • 1/2 tsp salt
  • 1 14 oz can cream corn

Preparation

Step 1

Mix together oil, eggs, milk, baking powder, flour and cornmeal, then add onion and corn. Pour 1/2 batter into greased 8 in pan. Top with cheese and jalapenos spreading into the batter. Pour remaining batter on top of cheese and jalapenos. Bake at 350 degrees for 35 minutes.
