Strawberry Peach Parfait

Ingredients

  • 1.5 c plain fat free greek yogurt, divided
  • 3 oz of 1/3 less fate cream cheese, softened
  • 4.5 TB powdered sugar, divided
  • 4 1/2 TB peach brandy, orange liquor or peach nector
  • 3/4 Tsp finely grated lime rind
  • 1.5 c chopped strawberries
  • 1.5 c chopped, peeled peaches
  • 5 (1.5oz) individually wrapped pound cake slices (Sara Lee)
  • 6 mint leaves (optional garnish)

Preparation

Step 1

place 3/4 c yogurt and cream cheese in a bowl; beat at low speed until smooth. Add remaining 3/4 c yogurt, powedered sugar, brandy and rind. Beat until just combined. Cover and chill until ready to use.

Combine remaining 1.5 TB powdered sugar, strawberries and peaches in a bowl and let stand 5 minutes.

Cut each pound cake slice into 4 pieces. Place 1 piece in the bottom of each of 6 parfait glasses. Layer with 3.5 TB fruit mixure and 3 TB yogurt. Repeat twice, reserving remaining pound cake for another use.

Garnish with mint leaf.
