Creamy Chili Potato Casserole

What a GREAT side dish this is! Something a little different to make too..

Ingredients

  • 6 c. frozen hash brown potatoes (thawed)
  • 1 can condensed cream of chicken soup
  • 1 c. sour cream
  • 2-4 Tb. diced chilis (mild, probably)
  • 1/4 c. chopped parsley (or cilantro)
  • 1 small can sliced black olives, drained
  • 1-1/2 c. grated sharp Cheddar cheese
  • 2 Tb. grated Parmesan cheese

Preparation

Step 1

Grease a shallow 2-qt. casserole pan. Combine all ingredients (reserve 1/2 c. Cheddar cheese) and pour into pan. Put remaining cheese on top. Bake at 350 for 40-45 min. or until tender and bubbly
