Ingredients

  • Shells:
  • 1 cup flour
  • 1 cup water
  • 3 eggs
  • dash salt
  • Filling:
  • 1 lb ricotta
  • 1 egg
  • parsley
  • mozzarella
  • meatballs (if desired)

Preparation

Step 1

Shells:
Combine all ingredients for the shells and pour scant amount into an 8 inch saute pan (just enough to cover bottom). Cook until done (mere seconds) and flip to other side. Remove from pan.

Filling:
Combine ricotta with egg and parsley. Place a rounded tablespoon on the center of each crepe. Add mozzarella and ground beef (if using). Fold edges or roll crepe.

Place a small amount of tomato sauce in bottom of casserole dish. Arrange manicotti in dish, add sauce to cover and bake at 350 for 1/2 hour.
