Bean Dip

Ingredients

  • 2 garlic cloves, peeled
  • 1 15 oz can soybeans, rinsed and drained
  • 1/4 cup tahini (sesame paste) or smooth peanut butter
  • 3 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1/4 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 cup chopped parsley

Preparation

Step 1

with the motor running, drop the garlic into a blender or food processor and run until chopped. add the remaining ingredients and pulse until smooth, stopping the machine once or twice to scrape down the side of the bowl.
