Rhubarb cake

Ingredients

  • Cream together:
  • 1 1/2 cup brown sugar, packed
  • 1/2 cup shortening
  • Add:
  • 1 egg
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 cups + 2 Tbsp flour
  • 1/2 tsp baking soda
  • 1 tsp vanilla
  • Add to mixture:
  • 1 1/2 cups rhubarb, cut into sm pieces
  • Spread into 9x13 baking dish
  • Sprinkle with:
  • 1/2 cup chopped nuts
  • 1/2 cup sugar
  • 1 tsp cinnamon

Preparation

Step 1

Bake 350* for 30 minutes.
Top with cool Whip.
Note* If you do not have buttermilk, you can subsitute 1 cup milk and 1 Tbsp vinegar. Let these 2 stand 5 min
