Reuben Casserole

Ingredients

  • 1 can sauerkraut (27 oz) well drained
  • 1 large tomato chopped
  • 1/4 cup ketchup
  • 1/2 cup mayonnaise
  • 1/4 cup minced onion
  • 1/2 t caraway seeds
  • 1 can corned beef (12 oz)
  • 1/2 lb shredded Swiss
  • 4 - 6 slices dark rye

Preparation

Step 1

Combine first 7 ingredients. Mix well. Spoon into a 9 inch square baking dish. Sprinkle cheese over top and bake at 425 for 20 minutes. Serve over rye toast.
