Ingredients
- 2 1/2 lb russet potatoes, peeled, diced into 2" chunks
- 6 cloves garlic, peeled
- 2 cups fresh basil leaves
- 1/2 cup parm cheese, grated
- 1 tsp kosher salt
- 1/2 tsp crushed red pepper flakes
- 1/2 cup olive oil
- 4 tbsp. unsalted butter, melted
- 3/4 cup half and half, warmed
Preparation
Step 1
cook potatoes and garlic in salted water 15-20 mins, or until tender. drain; return them to the pot and dry over medium heat. blend basil, parm, salt and pepper flakes in food processor until minced. drizzle in olive oil.
mash potatoes; stir in butter, half and half and basil mixture. serve.
