  • Pate Brisee
  • 10 Apples
  • 1 lb sugar
  • 1 lemon
  • Toffee Sauce:
  • 8 oz Brown Sugar
  • 1 lb heavy cream
  • 1 vanilla bean
  • 4 oz butter

Combine all ingredients and reduce until nappe. Mount with butter.
