Ingredients
- 3 cups grated raw carrots
- 4 eggs, beaten
- 2 cups sugar
- 1 1/2 cups vegetable oil
- 2 tsp baking soda
- 1/2 tsp salt
- 2 cups flour
- 1 tsp cinnomin
- 1 tsp vanilla
- 1 cup chopped walnuts (optional)
- 1 8 oz. cream cheese (room temp)
- 1 pound powdered sugar
Preparation
Step 1
1. Combine carrots, eggs, sugar and oil, and beat well
2. Add soda, salt, flour, cinnomon, vanilla and walnuts.
4. Pour mixture into 2 oiled and floured 9 inch pans.
5. Bake at 350* for 30-35 mins. Cool for 10 mins then allow to completely cool on baking rack.
6. Beat cream cheese and powdered sugar. Frost cake and serve.
