Ingredients
- MAKE A PASTE OUT OF:
- 3 1/2 pounds boneless pork loin
- 1 clove garlic, finely chopped
- 1 teaspoon oregano
- 1/2 teaspoon ground cumin
- 1/2 teaspoon chili powder
- 1/2 teaspoon black pepper
- 1/2 teaspoon salt
- 1 tablespoon lime juice
- 1 tablespoon oil
- HONEY LIME BASTING SAUCE:
- 1/4 cup lime juice
- 1/4 cup honey
- 1/2 teaspoon hot red pepper flakes
- 1 tablespoon dijon mustard
Preparation
Step 1
Rub paste on pork. Marinade several hours or overnight.
Place pork on grill over drip pan. Close lid. Cook using indirect heat 1 1/2 - 2 hours, brushing during last 20 minutes with basting sauce.
Cook to 160. Let stand 10 minutes before slicing.
