Ingredients
- olive oil
- 11 shallot, minced
- 1c1 c farro
- 1/41/4 white wine
- 3c3 c chicken stock
- course salt
- 12oz12 oz wild mushrooms, trimmed in 1/2 in. slices
- red pepper flakes
- 1bunch1 bunch spinach, trimmed
- 1/4c1/4 c Parm (optional)
Preparation
Step 1
Cook shallot. Add farro, wine and stock. Cook 35-40 min. til tender. Meanwhile, roast mushrooms. Add mushrooms and the rest at end.
