BLTA Pasta Salad

Ingredients

  • 4 cups rotini pasta, cooked according to package directions, cold water rinsed and drained
  • 8 slices cooked bacon, cut into bite sized pieces
  • 1 cup tomato slices
  • 2 cups romaine lettuce, torn into bite sized pieces
  • Dressing
  • 2 medium avocados
  • juice of 1 lemon
  • 2 Tbsp fresh basil
  • 1/3 cup extra virgin olive oil
  • 1/2 tsp kosher salt
  • pepper to taste

Preparation

Step 1

1. In a large mixing bowl, combine cooked pasta and bacon with tomato and lettuce.

2. In a blender or food processor puree avocados, lemon juice, basil, salt and pepper. Slowly drizzle olive oil in the blender while turned on, until fully incorporated.

3. Pour dressing over ingredients and stir to combine. Serve.
