Crustless Spinach Quiche

Ingredients

  • 1 c chopped onion
  • 1 c sliced fresh mushrooms
  • 1 T vegetable oil
  • 10 oz pkg frozen chopped spinach, thawed & well drained
  • 2/3 c finely chopped fully cooked ham
  • 5 Lg eggs
  • 3 c (12 oz) shredded Muenster or Monterey Jack cheese
  • 1/8 t pepper

Preparation

Step 1

In Lg skillet sauté onion & mushrooms in oil until tender. Add spinach & ham; cook & stir until excess moisture is evaporated. Cool slightly. Beat eggs; add cheese & mix well. Stir in spinach mixture & pepper; blend well.

Spread evenly into greased 9 in pie plate or quiche dish. Bake at 350 for 40-45 minutes until knife inserted near center comes out clean.
