Thai Crunch Bowl with Salmon

Recipe from "the Bowls" in Cooking light May 2016 issue. Great list of recipes. This receipe is set up for one serving. Multiply by number of servings for amounts.

Ingredients

  • 2/3 cup quinoa
  • 2 TBS matchsticks carrots
  • 2 TBS red pepper chopped
  • 2 TBS steamed edamame
  • 1/4 c chopped red cabbage
  • 3 oz salmon
  • 1 tsp dry roasted peanuts, ground
  • Sesame Peanut Sauce (multiplied original receipe by 3)
  • 1 TBS peanut butter
  • 1 TBS Soy sauce
  • 1 1/2 tsp rice vinegar
  • 1 1/2 tsp dark sesame oil
  • 1 1/2 lime juice

Preparation

Step 1

In bowl layer in the order of the recipe. I adjust based on personal tastes and what I have.

Dressing amount to taste.
