Apple Strudel

Ingredients

  • 2 1/2 c flour
  • 1 large egg
  • 1/2 c and 1 T butter
  • 6 T water
  • pinch salt
  • 2 1/2 lbs granny smith apples peeled and cored
  • 6 T sugar
  • 2/3 c raisins
  • 2 t cinnamon
  • 1 T grated lemon rind
  • 1 c ground almonds
  • 1 c soft bread crumbs
  • confectioners sugar
  • water

Preparation

Step 1

Sift flour onto work surface, add the egg and mix to form a dough like substance. In a medium saucepan, meil 1/4 c butter. Add water and pinch of salt and stir. Add to flour and mix to a soft sticky dough. Knead until smooth and leave in a warm place for 20 min.. Slice half the apples very thinly. Coarsely grate the rest of the apples into a bowl and mix in sugar, cinnamon, raisins, lemon rind, almonds and half of the bread crumbs.

Roll out dough on floured surface into a rectangle about 20x16 inches. Dough should be very thin.Brush with the other 1/4 c butter. Sprinkle with remaining bread crumbs leaving a 1" border all around. Spread apple mixture evenly and arrange apple slices on top. Fold border over filling then roll up. Place on greased baking sheet. Brush a T of butter and bake for 10 min. Reduce heat to 375 and bake 30 min. Sprinkle with confectioners sugar and drizzle with a simple glaze of confectioners sugar and water.
