Shrimp Roll Sandwiches

Ingredients

  • 1 1/2 lb. shrimp - cooked and chopped
  • 4 T mayo
  • 2 T finely chopped red onion
  • 1 T finely chopped celery
  • 1 T finely chopped red pepper
  • 2 T finely chopped fresh tarragon
  • 2 T finely chopped fresh flat leaf parsley
  • 2 T chopped chives
  • 1 T Old Bay seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 T fresh lemon juice
  • 6 top-slit potato buns
  • 4 T unsalted butter, melted
  • 1 head butter lettuce, torn
  • Lemon wedges, for serving

Preparation

Step 1

1. Sitr together chopped shrimp and mayon in large bowl. Add all the rest of ingredients, stirring in lemon juice last. Cover and chill until ready to serve.

2. Open buns, but do not separate halves. Brush the insides of buns with melted butter, and cook, butter side down, in a hot skillet over medium high until golden brown, about 2 min.

3. Divide lettuce among buns, and top with shrimp mixture. Serve with lemon wedges.
