Ingredients
- Vinegar & Rosemary Marinade:
- 3 C Sherry Vinegar & rosemary marinated peaches, drained, marinade reserved
- 1 t. Dijon mustard
- 4 lge heirloom tomatoes, sliced into 1/2" rounds
- Flaky salt & pepper
- 8 torn fresh mint leaves
- 3 med. peaches, sliced
- 1/2 C EVOO
- 2 1/2 T spiced dark rum (optional)
- 2 T sherry vinegar
- 1 1/2 t finely chopped rosemary
- Pinch kosher salt
- pinch sugar
Preparation
Step 1
Make marinade by combining all ingredients in med bowl & let marinate ate room temperature for at least 20 min & up to 24 hrs.
Salad:
In small bowl, whisk together reserved marinade & Dijon.
Arrange tomato on platter, top with peaches & drizzle with vinaigrette. Season with salt & pepper; garnish with mint & serve. Pass remaining vinaigrette at table
