Fresh Blueberry Pie

Ingredients

  • 3/4 c sugar
  • 3 T cornstarch
  • 1/8 t salt
  • 1/4 c cold water
  • 5 c fresh blueberries, divided
  • 1 T butter
  • 1 T lemon juice
  • 1 pastry shell (9in), baked

Preparation

Step 1

In pan over med heat, combine sugar, cornstarch, salt & water until smooth. Add 3 c blueberries. Bring to boil; cook & stir for 2 min until thickened & bubbly.

Remove from heat. Add butter, lemon juice & remaining berries; stir until butter is melted. Cool. Pour into pastry shell. Refrigerate until serving.
