Corn Chowder

Ingredients

  • 3 medium unpeeled potatoes, cut into 1/2-inch cubes
  • 1 medium onion, peeled, chopped
  • 2 cups low sodium vegetable stock
  • 2 teaspoons dried parsley flakes
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 14.5 ounce can cream-style corn, drained
  • 1 cup milk, skim or soy

Preparation

Step 1

In a medium saucepan, combine the potatoes (well scrubbed), onion, water, parsley, salt and pepper. Bring to a boil, reduce heat and simmer until potatoes are tender (15 to 20 minutes). Remove pan from heat. Stir in corn.

Place 2 cups of the mixture into the Vitamix container and secure lid. Select Variable 1. Turn machine on and quickly increase speed to Variable 5. Blend for 20 seconds or until mixture is pureed. Return mixture to the saucepan. Add milk and reserved vegetables.

Heat through. Season to taste. Serve immediately.
