Ingredients
- 2 pounds beets
- 2 teaspoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons brown sugar
- 1 teaspoon chopped fresh rosemary, or pinch dried
- 1/2 cup water
- salt and pepper, to taste
- 1/4 cup chopped fresh chives
Preparation
Step 1
Wrap beats in foil in single layer. Bake in preheated 400 oven until very tender; about 1 hour.
Cool beets slightly. Trim ends and peel while still warm. Cut into wedges.
Heat oil in large non-stick skillet. Ad beats and toss to coat with oil. Ad vinegar and sugar. Bring to boil. Add rosemary and water. Cook until liquid evaporates and beets are well glazed. Season with salt and pepper. Sprinkle with chopped chives before serving.
