Ingredients
- 2 pounds asparagus, trimmed
- 2 tablespoons olive oil
- 1 tablespoon grated lime rind
- 2 tablespoons lime juice
- 2 teaspoons liquid honey
- 1/4 teaspoon salt
- pinch pepper
- 1 tablespoon chopped fresh mint
- 1 tablespoon chopped fresh chives
- 2 tablespoons diced sweet red pepper
Preparation
Step 1
In large skillet, simmer asparagus in salted water for 6 minutes or just until tender. Drain on towel, transfer to platter.
Whisk oil, lime rind and juice, honey salt and pepper. Stir in mint and chives. Drizzle over asparagus, garnish with red pepper.
