Ingredients
- 1 large potato, baked
- 6 slices bacon, cooked crisp
- 2 c plain Greek yogurt
- 2 c cheddar cheese, grated
- 3/4 c milk, warm
- 4 T unsalted butter
- 1/2 c chives, chopped
- 1 t salt
- 1 t pepper
- Potato chips (optional)
- Celery (optional)
- Endive leaves (optional)
Preparation
Step 1
Pierce large potato and microwave on high for 10-12 minutes. Cook 6 slices of bacon until crisp, 6-8 minutes. Let cool, then crumble. Mash the potato well, skin and all, into large bowl. While its still warm, fold in plain Greek yogurt, grated cheese, warm milk, unsalted butter, chopped chives, bacon and salt and pepper. Top with more cheddar and chives, serve at room temperature with potato chips, celery and/or endive leaves
